Roasted tomato sauce

5 Large tomato’s, cut in quarters

5 cloves garlic, smashed

1 onion

1 small carrot

1/2 capsicum

2 tsp salt

1 tsp ground black pepper

1 tbsp olive oil

4 basil leaves

fresh thyme

dash Tabasco

dash Worcester sauce

2 tbsp unsalted butter

¼ tsp sugar

Preheat oven to 180 C

In a baking tray lay out tomato’s, onion, garlic carrot, capsicum, salt, pepper, and Thyme. Drizzle over the olive oil.

Bake for 70 minutes, or until the edges of the tomatoes and onions begin to turn black.

Transfer contents to a blender, add the basil leaves, Tabasco and Worcester sauce and blend until smooth.

Reheat the contents in a large pan on medium – high and add thyme, butter, sugar and more salt and pepper to taste.
