Frank's potato soup

OMG it’s root veggie goodness.  I cooked this for dinner and it was smooth, creamy, rich, smokey and crazy delicious.

2 large onions, diced finely
4 rashers bacon, diced
2 tablespoons butter
2 large, peeled and diced potatoes
3 cups of chicken stock  (we make our own, do use the best stock you can, it makes all the difference).
300mL sour cream

Put the onion, bacon and butter into a large, heavy based, deep saucepan. Sauté gently for at least 10 minutes, do not brown.
Add the potato and stir gently. Put saucepan lid on and turn down heat. Sweat ingredients, very gently, for 15-20 minutes.
Remove lid, add chicken stock.
Add pepper (salt if necessary).
Cook until potatoes are tender, add the sour cream and blend together until smooth,  bring back to a gentle simmer.
Just before serving, garnish with chopped parsley, and serve with home made crusty bread!
