Vanilla Cupcakes

French vanilla cupcakes

175g softened unsalted butter

160g caster sugar

1 tsp vanilla paste

pinch salt

½ tsp lemon zest

2 eggs

160g self-raising flour

100g plain flour

200ml milk

  1. Preheat the oven to 180C and insert cupcake cases into cupcake tray
  2. Beat the butter, sugar, vanilla, and lemon zest with a pinch of salt until pale and fluffy.
  3. Add the eggs one at a time, beating well.
  4. Sift the flours together, Using a wooden spoon, fold the flour and milk alternately into the creamed mixture.
  5. Spoon into the cupcake cases and bake for 20-25 minutes.
  6. Leave in the tray for 5 minutes before turning out onto a wire rack to cool.
  7. Once cool, ice with your topping of choice.
